This cut is better known internationally by its Portuguese name Picanha. Its distinctive fat cap gives this cut an extra juiciness and flavour. It is commonly used for BBQ grills, but it can also be prepared in the oven, where the texture and flavour are guaranteed.
Suggested to be cooked to a rare or medium rare point and a little crisped on the outside so that it reaches its maximum expression and taste.
